Bee's Knees: A Delightfully Simple Cocktail

Wed, May 15, 24  |  gin cocktails

The Bee's Knees is a Prohibition-era cocktail known for its perfect balance of sweet, tart, and boozy flavors. It's a simple yet sophisticated drink that's easy to make at home, perfect for relaxing evenings or enjoying with company.

Ingredients:

  • 2 ounces gin (London Dry Gin is a classic choice)
  • ¾ ounce fresh lemon juice
  • ¾ ounce honey syrup (recipe below)
  • Lemon twist (for garnish)

Honey Syrup Recipe:

  • ½ cup honey
  • ½ cup hot water

Instructions:

  1. Combine equal parts honey and hot water in a small saucepan or microwave-safe bowl. Stir or heat for a short time until the honey dissolves completely. Let the syrup cool completely before using. (Honey syrup can be stored in an airtight container in the refrigerator for up to a month.)
  2. In a cocktail shaker filled with ice, add the gin, lemon juice, and honey syrup (or simple syrup if not using homemade).
  3. Shake vigorously for about 20-30 seconds to chill the drink and combine the flavors.
  4. Strain the cocktail into a chilled coupe glass.
  5. Express the oils from a lemon twist over the drink and garnish the rim with the twist. Enjoy your Bee's Knees!

Tips:

  • Use fresh lemon juice for the best flavor. Pre-bottled juice can have a harsher taste.
  • While honey syrup is traditional, you can substitute it with simple syrup if preferred. However, honey syrup adds a subtle floral sweetness that complements the gin nicely.
  • If you prefer a less sweet drink, use a bit less honey syrup or simple syrup.
  • London Dry Gin is the classic choice, offering a juniper-forward character. But feel free to experiment with other gins to explore different flavor profiles.
  • Shaking the drink chills it and creates a slightly frothy texture.

The Bee's Knees is a delightful and refreshing cocktail that's perfect for any occasion. With its simple ingredients and beautiful presentation, it's sure to become a new favorite!
